The Best Spaghetti Ever! I have adapted this homemade spaghetti and meatballs recipe from Martha Stewart and it is a favorite with my family. I serve it every New Year\’s Day as an alternative to traditional pork and sauerkraut. The key ingredients are the sugar in the sauce and the raisins in the meatballs. If you would like to stay true to your New Year\’s resolutions, cut back a bit on the sugar and serve with wheat pasta.
Ingredients:
1 large egg
2 cups of chopped red onion
5 tsp of minced garlic
¾ c of plain bread crumbs
¾ cup of finely grated parmesan cheese
1 lb of ground turkey
1 lb of ground pork
1 28 ounce can of crushed tomatoes
1 28 ounce can of diced tomatoes
1 tbsp of tomato paste to thicken
Chopped fresh basil
Oregano
Thyme
Sage
Salt
Pepper
Sugar to taste
Golden raisins (optional)
Choice of pasta
In large mixing bowl combine, egg, 1 cup of onion, 3 tsp garlic, bread crumbs, parm cheese, pork, turkey, 2 tsp of chopped basil. 1 tsp of oregano, 1 tsp thyme, 1 tsp sage and raisins (optional). Mix well and form meatballs. Heat olive oil in large frying pan and cook meatballs until browned and cook through.
Meanwhile in large cooking pot, add two tsp of olive oil and cook remaining red onion until opaque. Add garlic, stirring constantly, and cook until fragrant, about 2 minutes. Add tomatoes and cook until heated through. Add fresh chopped basil, salt, pepper and then the sugar to taste. You should have a sweet, fragrant sauce.
Add meatballs to the sauce and cook pasta per instructions. Enjoy!
