Men Who Cook: In the kitchen with Brian Spencer

Men Who Cook is a new feature published by GANT.  Inspired by the GANT’s Men Who Cook charity fundraiser, the column will feature local men with kitchen talent who will share some of their favorite culinary creations. This week Brian Spencer shares his Beef Goulash recipe.

Brian serves as Prothonotary and Clerk of Courts for Clearfield Co.  He graduated from Curwensville High School and received his Bachelor of Arts degree from Thiel College in Greenville.  He is an active member of St. Bonaventure Roman Catholic Church, in Grampian and is a member of the Knights of Columbus.  Brian resides in Grampian with his wife Christine and their two children.

Beef Goulash

Goulash ingredients:

-Ground Beef/1 pound

-Bell Pepper / 1 or more as you desire

-Onion/1 

-Elbow Macaroni/1 pound box

-Diced Tomatoes/2 cans

Of course all these flavors are enhanced if you use fresh garden vegetables. 

35-45 minute cook time

Directions:

Brown the ground beef in a skillet.

In a large pot boil water add the noodles.  Bring the noodles to your desired texture and drain.

Combine the noodles and the ground beef with two cans of diced tomatoes and a diced onion in the large pot.  Add a bell pepper or two or any pepper (jalapeno) that your family enjoys.

Allow to simmer.  Add water to acquire the consistency you prefer for the goulash.

Breakfast is really my favorite meal to cook, but only in the last six or seven years have I cooked breakfast or any meal for that matter.  I like getting up early and drinking my coffee and one day my wife asked me to make her a sandwich to take to work.  I started cooking breakfast sandwiches and now it’s just part of my daily routine.  I have even taken breakfast sandwiches into my staff at the Courthouse.  

Goulash is a meal my wife has made, and I used it for my Men Who Cook sample at the Expo I building back in 2019.  It is a tasty meal and has been a family favorite for years.  The most appealing aspects of Goulash to me is how you can manipulate the ingredients to meet your own taste palette.  You can make Goulash with the main ingredients shown above but you can also add multiple bell peppers or different types of peppers with slightly different flavor profiles.  My wife Christine and I like spicier foods but our daughter Breanne does not so after cooking we add hot sauce to ours to give it that kick.  If your entire family enjoys spicier foods you can add a Jalapeno while during the cooking process and cook the flavors into your Goulash.

Goulash is a very versatile dish and can be manipulated to fit almost anyones flavor palette.  You can add a little water to make it more like a soup or make it a little thick and add it to a sandwich.  If you haven’t tried Goulash I suggest take some time and give it a try.
