This is my mother’s pumpkin pie recipe.
Pumpkin Pie (Claire Bernardo)
1 large can pumpkin
1 ? c. sugar
? tsp. Salt
1 ? tsp. Cinnamon
3 eggs (beat in pumpkin can)
1 ? tsp. Ginger
3 c. milk
nutmeg
2 unbaked piecrusts
Mix all ingredients, except nutmeg. Pour into 2 large unbaked pie shells. Sprinkle top with a little nutmeg. Bake in a 400 degree oven for 10 minutes, then turn down heat to 350 degrees and bake an additional 50 minutes. Check to see if middle is done. May use pumpkin pie spice in place of cinnamon, ginger, and nutmeg.
