Broccoli Casserole
1 bag of chopped broccoli
1 can cream of mushroom soup
1/2 cup of mayo
1 cup grated parmesan cheese
2 tbls. chopped onion (dry flakes)
3 eggs
1 stick margarine
4 slices of bread
Combine soup, mayo, eggs, cheese and onion. Cook broccoli according to directions. Drain well and place in bottom of 13 x 9 in. glass pan.
Cover with soup and cheese mixture. Melt margarine. Cut bread into cubes and combine with melted margarine until absorbed. Put bread
on top of casserole. Bake at 375 degrees for 25 minutes or until topping is golden brown.

Dale’s Corn Bread
1 stick butter, room temperature
1/2 cup sugar
4 eggs
1 15-ounce can creamed corn
1 1/4 cup flour
3/4 cup cornmeal
1 tablespoon PLUS 1 teaspoon baking powder
1/4 tsp salt
Preheat oven to 350 degrees. Cream butter and sugar till light and fluffy, add eggs one at a time, beating well after each addition. Mix in all remaining ingredients, pour into an 8-by-8 pan. Bake 35 to 45 minutes.

Cheddar Bacon Cheese Log
8 ounces softened cream cheese
3 tablespoons mayonnaise
3 drops hot sauce
1/8 teaspoon Worchestershire sauce
1/4 cup crumbled cooked bacon
8 ounce shredded cheddar cheese
2 tablespoons chopped onions
chopped nuts
Mix cream cheese, mayo, hot sauce and worchestershire sauce with an electric mixer until creamy.
Stir in bacon, onions and cheddar cheese, mix well. Cover and let set in the refrigerator for 2 hours.
Shape cheese mixture into a log, and roll in chopped nuts to cover. wrap in saran wrap and keep refrigerated or, wrap in saran wrap, then foil, and freeze until needed.
To serve, allow to warm up to room temperature and serve with crackers.

Green Bean Caserole
This is actually an easy one that even a frazzled, busy family can throw together for a family holiday meal or just the usual Wednesday.
2 cans green beans
2 cans cream of mushroom soup or 1 large can
2 cups milk
1/4 teaspoon black pepper
1 regular-size can french-fried onions
Drain water from beans and then stir together all ingredients except onions in a glass bowl. Add one half of onions and stir until just combined. Bake at 350 degrees for about one hour. Stir and then add the rest of the onions to the top. Bake for about 5 minutes more.
Makes enough for four really hungry people. Recipe can easily be doubled or tripled for larger groups.

SPECIAL CRANBERRY SAUCE
1 cup water
1 cup white sugar
1 12-ounce package fresh cranberries
1 orange, peeled and pureed
1 12-ounce Mandarin oranges
1 pear, peeled, cored and diced
1 cup chopped dried mixed fruit
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
In a medium saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in cranberries, Mandarin oranges, dried fruit, cinnamon and nutmeg.
Cover and simmer for 30 minutes, stirring occasionally, until the cranberries burst. Remove from heat, and let cool to room temperature.

Grilled Turkey
12 pound turkey
2 cups water
3 tablespoons chicken bouillon powder
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon poultry seasoning
1/2 teaspoon chopped parsley
Prepare an outdoor grill for indirect medium heat, and lightly oil grate.
Rinse turkey, and pat dry.
In a large roasting pan, mix together the water, bouillon powder, garlic powder, onion powder, poultry seasoning, parsley and paprika.
Place turkey, breast side down, in the roasting pan. Scoop the pan mixture over the turkey.
Cover tightly with foil and place on grill. Grill 3 to 4 hours, until the internal temperature of the thigh reaches 180 degrees F.
